An article in the Houston Press tells the story of a sushi chef, Luis Gallardo, who is battling cancer and has been supported by him employer and colleagues, who have set up a GoFundMe campaign and are selling a special sushi roll to help him cover his medical costs. Gallardo is only 24 years old, and his situation is particularly difficult because, as is typical with many people employed in the restaurant industry, he is uninsured.
